Strawberry Champagne Cocktail

Plopping a strawberry into a glass of champagne does not constitute a “strawberry champagne cocktail.”
Strawberries & Champagne are a classic Valentine’s gift: they taste amazing together and inspire romance. And, while showing up with champagne and strawberries in hand is sure to win you points on Valentine’s Day, to really impress your beloved, put a little work into it: Follow our recipe below to serve your darling a strawberry-flavored champagne cocktail. Promise, this one takes strawberries + champagne to the next level!

Champagne (Sparkling Wine)

First, if you are preparing this cocktail as a Valentine’s treat and you have any leftover New Year’s sparkling winen/champagne, use that.

Now, while the recipe does call for specifically Champagne, as you are 1. mixing it with something else and 2. people often say “champagne” when the really just mean dry, sparking wine, we’re ok making a swap here. Please note though: Use a dry sparkling wine, not sweet. A decent sparking line should be in the $12 – $15 range. We like “Cava,” from Spain. A dry Prosecco would work great, too. Unless you’ve found something you absolutely love, don’t be cheap and spend less than $10; you’re just asking for a headache.

Strawberries

Strawberries in February? Yup – frozen! Fresh would absolutely work as well, but as we are blending them, either or is just fine.

Prep

Chill flutes in the freezer, as you prep the cocktail; about 15 minutes. If using fresh strawberries, hull and chop your strawberries in half. Squeeze the lime; reserve juice.

Strawberry Champagne Cocktail

  • 1½ cups strawberries, fresh or frozen (Set aside 4, for garnish)
  • 1 lime
  • 1-2 tsp simple syrup
  • 1 bottle champagne

Puree the strawberries in the blend. Add simple syrup, if using, to taste and lime juice. Blend briefly, just to combine.
Strain strawberry puree through a sieve, to remove seeds.
In a (chilled) champagne flute fill ¼ with strawberry puree. Pour a little champagne in the glass, and give it a stir to blend. Top with champagne. Garnish with fresh strawberry and serve immediately. Makes 6 cocktails.
